Preparation time: 15 minutes
Chill Time: Overnight
- 1 packet of Glengarry Shortbread
- 1 packet of Tim Tam – Classic Dark
- 1 tin of peaches (drained)
- Boysenberry jam
- 1 red jelly (prepared, cooled, but not set)
Cut shortbread in half and coat with jam, place in dishes.
Top with peaches.
Pour jelly over peaches and shortbread (leaving 2 cms at top of dessert dishes)
When set overnight in the fridge, whip the cream and cover the top of the set jelly.
Put Tim Tams in a small plastic bag, get a rolling pin and gently crush until in large crumbs.
Place on top of the cream and “voila”, all done!
Note: You can also add half a glass of sherry to the jelly for extra flavour
