Sesame Chicken

Ingredients

2 eggs, beaten
salt and pepper
2 skinless chicken breasts
10-15 Arnott's Sesame Wheat biscuits
2 tbs grated parmesan cheese
1 tbs chopped parsley
1 clove garlic, crushed
Olive oil for frying

Method

Beat eggs, season with salt and pepper.

Slice chicken breasts in half so that they are half the thickness.

Place chicken in bowl with beaten eggs and leave to sit while preparing crumbs.

Crush Sesame Wheat biscuits in a plastic bag with a rolling pin (or use a food processor). Empty crumbs into a shallow dish.

Add cheese, parsley and garlic to crumbs. Combine with finger tips.

Using a fork, take chicken one piece at a time, and coat with crumb mixture, patting crumbs into chicken with flat of hand.

Put crumbed chicken in refrigerator for 20 mins.

Heat olive oil in frypan and fry chicken, turning once to cook both sides. Alternatively, spray crumbed chicken on both sides with olive oil spray, and bake in oven set at 180 degrees Celsius, for approximately 10-15 mins, then turn to cook other side.

Serve with mashed potato and vegetables in season, or with a salad in summer.
