Handy Hint
This recipe makes a nice rich cheesecake. You can modify it if you wish by adding fruits or different flavours.

Ingredients
One pack Arnott's Nice biscuits, crushed
200g butter, warmed softened
Filling
500gm cottage cheese
250 mL sour cream
100 mL whipping cream
2 eggs
50 to 100g caster sugar to taste
1 pack almond flakes
Method
Preheat oven to 200°C.
Line a 25cm springform tin with greaseproof paper, preferably two layers.
Mix crushed Nice biscuits and butter together and press into tin to make the crust. Make sure you line the sides.
For filling, mix all the ingredients together in a bowl until the cottage cheese is smooth.
Sprinkle with almond flakes and cook in the oven for 50-60 minutes or until mixture is set.
