Ingredients
BISCUITS:
- 750g Marie biscuits
- 1 ½ cups chopped walnuts (can be substituted for choc chips)
- 250g unsalted butter
- 1 ½ cups castor sugar
- 4 tabs cocoa
- 4 lightly beaten eggs
ICING:
- 375g choc buttons
- 3 tablespoons rum (or essence to taste)
- 180g unsalted butter
Method
Coarsely crush biscuits and combine with chopped walnuts (or choc chips). Set aside.
Melt butter and sugar over gentle heat, stirring until sugar is disolved. All cocoa and stir.
Remove from heat and fold in lightly beaten eggs. Pour mixture over biscuit mixture and combine. Press mixture into a 5cm deep tray lined with baking paper. Chill until set.
For icing, melt 375g choc buttons, 3 tabs rum and 180g unsalted butter over a double boiler. Pour over slice and chill.
